The issue is that they are curved so only a small part of it would make contact with the stove. There are special induction + wok combos where the induction surface is also curved but most people will not have that.

They sell for super cheap at Asian grocery stores. I got one for like $35 CAD.

Edit: Oh actually although cheap, the ones you find at asian stores will mostly be woks which dont work well unless you have a gas stove so keep that in mind.

Most of the produce bags here have handles. I found that the meeting place where the “handle” meets the “bag” to be the easiest spot to separate. I just rub the bag between my fingers in that area and usually it only takes a single rub for it to separate.

That sounds similar to the OG chinese classic: Tomato and Egg. You literally dice a tomato, stir fry a bit to soften it then scramble an egg in the same pan. Salt and you are done. There are many many minor variations including adding sugar or msg. Topping with scallions or even adding ketchup, sesame oil or pepper.
